Alheit Nautical Dawn 2023 750ml

A single origin Chenin from the False Bay in Stellenbosch. The vines were planted on Granite soils in 1978 and are dry farmed.

The grapes were meticulously hand sorted and whole bunch pressed. The juice, which is preferred very cloudy and raw, underwent minimal settling with no additions. Wild fermentation took place in cement eggs, foudres, and old barrels of various sizes, lasting about one month. The wine then aged on lees for around 12 months and rested in tanks on fine lees without fining for an additional five months before bottling. This process showcases our simple and careful winemaking approach.
