Crafted from low-yielding bush vines planted in the early 2000s on granitic soils in the Paardeberg, this Grenache Noir has been sourced from the same vineyard since 2014.
Tasting Notes: The nose offers a captivating interplay of black tea, tomato leaf, and a subtle hint of struck match, followed by enticing notes of cherry and fig. The palate is defined by flavors of raspberry, ripe blackberry, and forest floor porcini, leading to a flinty, tense, and gripping finish. This wine possesses the structure to age gracefully.
Food Pairing: Seared lamb chops with tomatoes and olives
Winemaking: Their gentle, hands-off approach highlights the delicate and elegant nature of this grape. Hand-harvested grapes were destemmed and fermented with 30% whole clusters in small tanks. A four-day cold soak allowed for gentle color and flavor extraction. The wine underwent gentle punch-downs twice daily, preserving its natural character. After a slow and steady fermentation, a 10-day post-fermentation maceration extracted fine, soft tannins. The wine matured for 12 months in old Foudre, followed by bottling in August 2023. No fining was used.
