Balvenie
Balvenie, unique among single malts was established in 1892 in Speyside, Scotland by Founder William Grant. It’s the only distillery in the Scottish Highlands to stand by and continue to use the Five Rare Crafts of whisky making. These are home-grown barely; traditional malting floor; coopersmith; cooperage (toasting the casks) and a malt master.
Their Head Cooper Ian McDonald has been working there for over 50 years. It was by pure chance they noticed when whisky got transported across oceans in oak casks the whisky took on mild flavours of the previous liquid content of the casks. Today they use this method deliberately to infuse and mature the whisky.
