Bollinger

Champagne Bollinger was established in 1829 near the village of Ay in Champagne. Today the farm spans over 179 hectares on two plots in the region. A sight to be seen is the magnum reserve – a cellar of over 800 000 magnum bottles which store a portion of the best wines and are used to add complexity to non-vintage blends. Bollinger’s style is to let wines age on the lees for double or triple the amount of time required by the Champagne appellation. This method allows the wine to develop in complexity while adding to the delicate quality and velvety texture.
