Julien Schaal
Julien Schaal is the dream of Oliver and Sophie Biecher who established their cellar in the village of Saint-Hippolyte, France and one here in South Africa. Their philosophy is to keep things simple. Grapes are hand-picked, then gently pressed for a longer period of time to ensure elegance, then the four month fermentation process beings, resulting in finesse and rare quality.
