Maison Billecart-Salmon was founded by husband and wife duo Nicolas François Billecart and Elisabeth Salmon in 1818 in Mareuil-sur-Aÿ. It was Louis Salmon, Elisabeth’s brother who was the first winemaker. In 2018 they celebrated 200 years and seven generations of producing some of the worlds best champagne. Their champagnes are made traditionally yet with longer fermentation at lower temperatures, then vinifying them cold to maintain freshness and finesse.
